My daughter has been learning about edible plants over the last year - she took some of the flower heads, dipped them in some egg, dragged in a bit of flour, pepper and salt, and lightly fried them.
They were actually good.
ps - only use non-chemically treated dandelions! :)

Beautiful little curls, powdery with pollen. I'll have to look more closely at the next dandelion Greta brings me. :)
